Elaboration:
Manou harvested between the end of September and the beginning of October. Hand harvested in boxes. Alcoholic fermentation with skins for 16-18 days. A part is fermented with whole grapes, together with the rapa. Co-fermentation of varieties from the same farm. Short aging in barrels and with its lees for 6-8 months.
Manou, it is a wine with an intense purple-red color with violet tones, the nose is dominated by red and black fruit with hints of spices and Mediterranean herbs, very mineral and with subtle tones of wood and licorice, once in the mouth it is expansive and with character, very round and complex
Pairing:
Manou it is perfect by the glass or with white or red meats, stewed meats, sausages or cheeses, a versatile wine that is good either way.
