Description
Elaboration:
Amb un Parell it is made with manual harvest in 18 kg boxes with the rising moon, flower/leaf day. El lledoner: incubated and fermented in stainless steel at 20 ºC / 25 ºC (descendant and fruit) which was uncovered and transferred without using the presses. while Samson was
incubated and fermented in stainless steel at 20 ºC /22 ºC (descendant and flower) and was decubated and transferred without using the presses.
Black hawthorn and samson underwent malolactic fermentation already assembled to merge their properties in both acidity and degree and polyphenols. Malolactic fermentation: spontaneous with indigenous flora. Light clarification with gelatin. Not filtered. Aging in 300 liter barrels and extended until the acidity and tannins of the two varieties melded and rounded. Aging for 6 months in French oak barrels of two wines. Bottled on May 14, rising moon and fruit day.
Tasting note:
Amb un parell it has the ruby red color of Grenache and turns more purple with the purple contribution of Carignan in the blend. The first nose shows red fruits such as ripe cherry, raspberries and wild strawberries. As it oxygenates, more hints of jam evaporate with a spicy touch of nutmeg and mocha. The entry in the mouth is very sweet, with soft tannins but with a certain memory of garrigue plants such as rosemary. The ripeness of the tannins, the unctuousness and the sweetness of the alcohol level give a very warm and velvety feel to this blend. Fresh mouth finish, which gives a perfumed persistence.
Pairing:
Powerful and smooth wine, very gastronomic, with all the typicality of Empordà wines, to accompany meats and stews and also to drink.
